Tasting Notes
Sight Intense red, ripe cherry with violet shades.
Nose Medium-High intensity, complex (ripe fruits, flowers and nuts) and very nice.
Flavour well structured, tasty, showing its youth and with a nice and durable after taste.
Serve with... perfect when served with red meats and cheeses.
Criomaceration
Once the grapes and separated from the bunch, is left in afermentation tank, but instead of fermented, the grapes are cooled to very low temperatures using recirculation of water and ice. During this period, the grape skins to the must go giving color and fruitcharacter of Tempranillo. At such low temperatures used there is norisk of attack by microorganisms or uncontrolled fermentations. After that, place the racking and fermentation in another thank where differente special yeasts provide aromatic character of fruitiness and mouthfeel of wines produced. In this period raise the temperature to 20ºC and avoid the continuous pumping can damage traditional characteristics of the wines. Finally, we get wines with more personality, structure and differentiation especially suitabale for sonsumption in the year and with an extraordinary behavior during periods of oak aging.
